Ingredients
Rice
2 kg glutinous rice, rinsed and soak for 4 hours
Drain and set aside

4 kg gm pork belly (without skin), diced
1kg candied winter melon, diced
24 pcs chinese mushrooms, diced
30 shallots, chopped
1 whole garlic, minced
Pandan leaves, cut into squares
Seasoning for filling:100 gm Coriander powder

1pc gula melaka, chopped

3 tsp salt

Wrapping dumplings
Wrap dumpling with a piece of pandan leaf for added fragrant.
Cooking the dumplings

Preparing the rice
- Rinse until water runs clear..
- Drain and set aside overnight.
Preparing the leaves
- Soak leaves & strings overnight.
- Rinse until water runs clear of dirt.
- Wipe each leaf with a cloth.
- Set aside.
Preparing the filling
- Using 2 cups of oil, fry shallots till golden brown.
- Set aside fried shallots and leave the oil in work. Reserve some shallots oil for rice.
- Fry mushrooms and garlic till fragrant.
- Add pork and seasoning. Stir fry until cooked.
- Add fried shallots and mix well. Set aside.
Preparing the rice
- Mix the seasoning for rice together with washed and drained glutinous rice. Set aside.
Wrapping dumplings
Wrap dumpling with a piece of pandan leaf for added fragrant.
Cooking the dumplings
- Fully submerge dumplings in Philips pressure cooker.
- Add some pandan leaves for added fragrant
- Cook using 30 minutes mode.
